Baby Food - Stocks

Chicken Stock
- Dried chinese mushrooms x 5
- Water 2L
- Chicken 800g

Pork Stock
- Long chinese cabbage 500g
- Water 2L
- Pork bones for soup 500g
- Spring onions (scallions) 2

Fish stock
- Dried ikan bilis 200g
- Water 2L
*remember to wash the ikan bilis well to remove the sodium!

Veg stock
- White onions 2, medium, about 250g
- Carrots, 2, medium, about 250g
- Sweet corn, 1 ear, about 250g
- Celery, 4 stalks, 250g
- Long chinese cabbage, 500g
- Water, 2L
*cut all veg up, put into the boiling water, simmer for 2 hours. Strain the stock before using.
*add soy beans, mushrooms and tomatoes to the stock for more flavour

Baby Food - mee sua with egg yolk & spinach

Water 500ml
Mee sua 45g
Soy bean oil
Chye sim or spinach
Homemade stock

1. Bring the water to the boil in a small pot. Blanch the mee sua for 2 min, then drain and rinse with cold water. Cut the mee sua into small pieces and set aside.

2. Heat the oil in a small frying pan. Add the beaten egg yolk and scramble it using a wooden spatula. Set the scrambled egg yolk aside.

3. Wash and drain the veg. Pluck the leaves and discard the stems. Chop the leaves up finely.

4. Bring the homemade stock to the boil in a pot. Add the veg and mee sua and cook for 5 min or until the veg are soft and cooked.

5. Transfer the mee sua soup to a small bowl and top with the scrambled egg yolk.
